Le Meilleur Horizons Takes Silver at Hunter Commercial Cookery Competition

Le Meilleur Horizons Golf Resort fourth year apprentice, Dylan Abdoo was awarded “Silver” in the 2006 HTN & Restaurant and Catering NSW/ACT Apprentice Chef’s Culinary Competition held at  Hamilton TAFE yesterday.

 

Competing against eleven entrants from the Hunter region, Dylan was required to prepare a fine-dining standard entrée, main and dessert from a mystery box in three hours and was judged by Darren Ho on personal presentation, work flow, culinary skills, kitchen hygiene and creativity, portion size, nutritional balance, flavours and visual presentation within a three hour time period.    Dylan created the following menu to take out the silver award:

 

Entrée: Asian scented chicken broth with balsamic onion relish

Main: Pan seared beef medallions, potato crème caramel, turned carrots and

black mustard seed jus

Dessert: Trio of pineapple – pineapple and saffron jelly, fragrant pineapple consommé, pineapple crème-renversée and crisp tuile

 

Le Meilleur Horizons Operations Manager, Nick Park said “Le Meilleur Horizons is very pleased with Dylan’s results as this is yet again a reflection of the high standard of apprentice chefs we have at the resort and the extraordinary talent Dylan has shown as an up and coming chef”.
